日常工作
廚房按服務時間運作:開市前做 prep 同試味,服務期間按單出菜並同傳菜協調,收市後清潔、標籤食材同預備翌日工序。低溫慢煮同醬汁等工序要提早準備,所以時間管理好重要。
入行與訓練
一般由學徒或廚房助理做起,冇硬性學歷要求;可讀職業訓練局西式餐飲課程或烹飪學院課程,並按需要完成食物衞生課程。實際烹調技巧主要靠廚房實戰同跟師傅,英文食譜同標準食譜(standard recipe)係日常工作一部分。
薪酬與晉升
薪酬由僱主按崗位、經驗同餐廳級數決定,冇法定薪級;服務費分帳、超時同包薪安排視乎公司,所以本站唔估算收入。路線:學徒/廚房助理 → 初級廚師(Commis)→ 部門廚師 → 主廚(Sous Chef)→ 行政總廚,亦可轉做食品研發或自己開店。

Day-to-day work
Kitchens run to service times: preparation and tasting before opening, cooking to order during service in step with the pass, then cleaning, labelling ingredients and setting up the next day's tasks afterwards. Slow cooking and sauces need lead time, which makes scheduling important.
Entry and training
Most start as apprentices or kitchen assistants with no fixed academic requirement, and a Vocational Training Council western catering or culinary school course helps, along with a food hygiene course where required. Technique is largely learned on the line from senior chefs, and English recipes and standard recipe cards are part of the job.
Pay and progression
The employer sets pay by station, experience and the standing of the restaurant with no statutory scale; service charge sharing, overtime and package pay vary by company, so this site prints no estimate. The route runs apprentice or kitchen assistant, commis chef, chef de partie, sous chef, then executive chef, with moves into product development or opening your own place.
